While soy milk retains most of the soluble components—including isoflavones, sugars, and some proteins—okara concentrates the insoluble fiber (predominantly cellulose and hemicellulose), residual plant protein (typically 15–20% by dry weight), and lipid-soluble phytonutrients such as phytosterols and tocopherols.
Clinically, the high fiber content supports gastrointestinal motility and may improve glycemic control by slowing postprandial glucose absorption.
