Consuming moldy food poses significant health risks, and no washing or cooking method can reliably eliminate the danger. Mold growth on food often indicates the presence of mycotoxins—heat-stable, toxic secondary metabolites produced by certain fungi. These compounds, including aflatoxins, ochratoxin A, and patulin, are not destroyed by standard home cooking techniques such as boiling, baking, or microwaving.
Surface washing—whether with water, vinegar, or bleach—is ineffective at removing mycotoxins, which frequently penetrate deep into the food matrix. For example, in soft fruits, bread, yogurt, or soft cheeses, mold hyphae can extend far beyond visible colonies, carrying toxins throughout the product. Even cutting away the visibly moldy portion fails to ensure safety, as microscopic contamination may be widespread.
Regulatory agencies—including the U.S. Food and Drug Administration (FDA) and the European Food Safety Authority (EFSA)—advise discarding moldy foods outright, particularly perishables and high-moisture items. Exceptions exist only for certain dense, low-moisture foods like hard salami or firm cheeses (e.g., cheddar or Parmesan), where mold is typically confined to the surface and can be safely trimmed—provided at least 1 inch (2.5 cm) of surrounding material is removed and the knife does not cross-contaminate unaffected areas.
Prevention remains the most effective strategy: store perishables properly, inspect food before consumption, adhere to “use-by” dates, and avoid purchasing damaged or bruised produce. When in doubt, discard—never taste-test questionable items, as even minute amounts of some mycotoxins can cause acute toxicity or contribute to long-term health consequences, including hepatotoxicity and carcinogenesis.
