This natural latex—composed primarily of proteolytic enzymes and polyphenolic compounds—is released when the fruit is cut or punctured, causing discomfort and making handling difficult.
To minimize contact with this adhesive sap, experts recommend several evidence-informed techniques. First, apply a thin, even layer of neutral vegetable oil (such as coconut or sunflower oil) to hands, knives, and cutting boards before handling. The oil creates a hydrophobic barrier that impedes latex adhesion without compromising food safety. Second, work with the fruit while it is still cool—ideally refrigerated for 30–60 minutes prior to cutting—as lower temperatures reduce latex viscosity and flow. Third, use a serrated knife with a non-stick coating or stainless steel blade; avoid carbon steel, which may react with the fruit’s enzymes and discolor both blade and flesh.
For optimal efficiency, begin by slicing off the stem end and standing the fruit upright on a stable surface. Then, make two longitudinal cuts from top to bottom, avoiding the central fibrous core.
