When preparing dried Chinese yam (Dioscorea opposita), also known as Huai Shan Yao, preventing enzymatic browning is essential to preserve both appearance and nutritional quality. The darkening that occurs during sun-drying results primarily from polyphenol oxidase (PPO)-mediated oxidation of phenolic compounds—especially tyrosine and catechins—upon exposure to atmospheric oxygen and light.
Effective mitigation begins with immediate post-harvest handling. After peeling, freshly cut yam slices should be immersed in an acidic solution—typically 0.5% citric acid or 0.2% ascorbic acid—for 3–5 minutes. This step lowers surface pH, irreversibly inhibiting PPO activity without compromising starch integrity or bioactive diosgenin content.
Blanching offers an alternative: brief immersion in boiling water (95–100°C) for 60–90 seconds denatures PPO and peroxidase enzymes. However, excessive heat can leach water-soluble vitamins and alter texture, so precise timing and rapid cooling are critical.
During sun-drying, arrange slices in a single layer on food-grade mesh trays, ensuring full air circulation and minimal stacking. Optimal drying occurs at ambient temperatures between 25–35°C with relative humidity below 60%. Direct UV exposure should be limited to morning and late-afternoon hours; midday sun intensifies oxidative stress and accelerates Maillard reactions, contributing to undesirable browning.
Once moisture content drops to ≤12%, transfer the dried yam to opaque, airtight containers with oxygen absorbers. Storage under cool, dark conditions preserves antioxidant capacity—including allantoin and mucilage—and prevents lipid peroxidation in residual yam oils.
