Luffa contains phenolic compounds such as chlorogenic acid and caffeic acid, which, when exposed to oxygen and in the presence of PPO, undergo oxidation to form quinones. These then polymerize into brown melanoid pigments—a natural biochemical process similar to what occurs in cut apples or eggplants.
The extent of browning is influenced by several factors: pH, temperature, oxygen exposure, and the integrity of plant cell walls. Luffa’s relatively high PPO activity and neutral-to-slightly-alkaline cellular environment favor rapid oxidation. Mechanical damage—such as slicing with a dull knife or excessive handling—ruptures more cells, releasing greater amounts of enzyme and substrate, thereby accelerating discoloration.
To minimize browning while preserving nutritional quality and texture, evidence-informed culinary strategies include: briefly blanching slices in boiling water for 60–90 seconds to denature PPO; soaking cut pieces in acidic solutions (e.g., 0.5% citric acid or diluted lemon juice) to lower pH and inhibit enzyme activity; using sharp stainless-steel knives to reduce cellular trauma; and minimizing air exposure by covering prepped luffa with damp paper towels or storing submerged in cold water until cooking. Notably, adding alkaline agents (e.g., baking soda) should be avoided, as they increase pH and exacerbate browning.
From a clinical nutrition perspective, these methods do not meaningfully alter luffa’s dietary fiber, potassium, or vitamin C content when applied appropriately. Over-blanching or prolonged acidic soaking, however, may leach water-soluble nutrients.
