Freshly laid eggs have a relatively low internal pH—around 7.6 to 7.9—due to high levels of dissolved carbon dioxide in the albumen. As eggs age, CO₂ gradually diffuses out through the shell’s pores, and the albumen’s pH rises, reaching approximately 9.2 after about 10 days of refrigeration. This alkaline shift causes the outer layer of the egg white (the thin albumen adjacent to the shell membrane) to weaken its bond with the inner shell membrane.
During boiling, this higher pH promotes a chemical reaction between the egg white proteins and the calcium carbonate in the shell, forming microscopic calcium–protein complexes at the interface. These complexes act like tiny anchors—making the membrane adhere more tightly to the shell rather than to the egg white. Consequently, when peeling begins, the membrane tends to remain stuck to the shell, pulling away fragments of the underlying albumen and resulting in an uneven, ragged surface.
In contrast, older eggs—typically those stored for 7–10 days before cooking—peel more cleanly because the increased pH has already loosened the membrane–albumen bond, allowing the membrane to separate more readily from the white during cooling and peeling. For optimal peelability, many food scientists recommend using eggs that are at least one week old and cooling them rapidly in ice water immediately after boiling to encourage contraction and separation at the air cell and membrane interfaces.
