Fresh jujubes are exceptionally rich in vitamin C, containing up to 300–500 mg per 100 g—more than three times the amount found in oranges. They also provide notable amounts of potassium, dietary fiber, and bioactive compounds such as flavonoids and triterpenic acids, which contribute to antioxidant and anti-inflammatory effects.
Dried jujubes, while lower in vitamin C due to heat-sensitive degradation during dehydration, concentrate other nutrients. Their sugar content rises substantially—primarily as glucose and fructose—making them energy-dense. Dried varieties retain high levels of potassium, iron, and polyphenols, and exhibit enhanced concentrations of cyclic AMP, a compound studied for its potential immunomodulatory and neuroprotective properties.
Nutritional quality also depends on cultivar, growing conditions, and post-harvest handling. Traditional cultivars like ‘Lang’ and ‘Jinsixiaozao’ are consistently documented in peer-reviewed literature for superior phytochemical content compared with newer hybrids.
