This discoloration is primarily due to the oxidation of polyphenolic compounds, such as tyrosine and catechins, catalyzed by endogenous polyphenol oxidase (PPO) enzymes. Unlike microbial spoilage, this reaction is purely chemical and does not indicate bacterial growth, toxin formation, or loss of nutritional value.
From a food safety perspective, refrigerated, properly covered shan yao that has darkened overnight remains safe for consumption, provided it shows no signs of spoilage: no off-odors (e.g., sour, fermented, or ammonia-like smells), no slimy or excessively soft texture, and no visible mold. The antioxidant capacity and key nutrients—including dietary fiber, potassium, vitamin B6, and diosgenin (a steroidal saponin with documented anti-inflammatory properties)—remain largely intact after short-term refrigeration.
However, prolonged storage—even under refrigeration—increases the risk of microbial contamination and enzymatic degradation. For optimal safety and quality, health authorities recommend consuming cut or peeled shan yao within 24–48 hours when stored at ≤4°C in an airtight container. To minimize browning, briefly blanching slices in boiling water for 60–90 seconds before refrigeration can inactivate PPO; alternatively, submerging them in acidulated water (e.g., 1% lemon juice or vinegar solution) provides temporary protection.
