Standard whipping cream—often labeled as “heavy cream” or “double cream” in the U.S. and UK—contains 36–40% milk fat. This high fat concentration is essential: during whipping, fat globules partially coalesce around air bubbles, forming a stable, voluminous foam. Cream with less than 30% fat typically lacks sufficient fat to create and sustain this structure, resulting in poor volume, rapid collapse, or separation into butter and buttermilk.
“Light cream,” “coffee cream,” or “half-and-half”—commonly sold under names like *dan nai you* (literally “light dairy oil”) in some Asian markets—usually contains only 10–20% fat. These products are formulated for pouring, not aerating. Attempting to whip them will not yield stable whipped cream; instead, they may thicken slightly but fail to hold peaks, often curdling or weeping liquid within minutes.
For reliable results, always verify the fat percentage on the label. If whipping is intended, choose a product explicitly labeled “whipping cream” or “heavy cream” with ≥30% milk fat. Additionally, ensure the cream is well-chilled (ideally 4°C or below) before whipping, as cold temperatures help maintain fat crystallinity and improve foam stability.
