Fresh shiitake mushrooms are prized for their rich umami flavor and meaty texture, but they’re highly perishable and prone to enzymatic browning—especially at the stem ends and cut surfaces—when exposed to oxygen and ambient temperatures. This darkening is not mold or spoilage per se, but rather the oxidation of polyphenols (such as tyrosine and catechols) catalyzed by the enzyme polyphenol oxidase, a natural process accelerated by bruising, moisture accumulation, or improper storage.
To preserve freshness and prevent discoloration, store unwashed shiitakes in a single layer inside a brown paper bag—not plastic—with the top loosely folded. The paper bag absorbs excess moisture while permitting limited airflow, inhibiting both condensation buildup and rapid enzymatic oxidation. Keep the bag refrigerated at 1–4°C (34–39°F), ideally in the main compartment—not the crisper drawer—where humidity fluctuations are minimized. Under these conditions, whole, uncut shiitakes typically retain optimal color, texture, and flavor for 7–10 days.
For longer-term preservation, avoid freezing raw shiitakes, as ice crystal formation disrupts cell structure and promotes oxidation upon thawing. Instead, briefly blanch them in boiling water for 60–90 seconds, then immediately chill in ice water, pat dry thoroughly, and freeze in airtight, vacuum-sealed bags. Blanching deactivates polyphenol oxidase and reduces microbial load, significantly delaying browning during frozen storage.
If darkening has already begun, assess safety first: slight surface browning without sliminess, off-odor, or visible mold is generally safe for cooking—heat denatures residual enzymes and eliminates potential pathogens. However, discard any mushrooms exhibiting softness, exudate, ammonia-like odor, or fuzzy growth, as these indicate advanced spoilage or microbial contamination.
