In typical unheated winter environments—especially in northern regions where indoor temperatures may hover near 15°C (59°F)—bulk fermentation can take 3 to 5 hours, compared with 1 to 2 hours under ideal conditions.
This extended timeline reflects the biochemical reality: cold temperatures reduce enzymatic efficiency and slow yeast metabolism, delaying carbon dioxide production and gluten relaxation. To compensate, many professionals recommend using slightly more yeast (up to 25% increase), dissolving it in warm (not hot) liquid (35–38°C / 95–100°F), or proofing dough in a temperature-controlled environment—such as an oven with the light on, a proofing box, or a closed cooler with a warm water bowl.
Crucially, visual and tactile cues—not strict timing—should guide readiness assessment. Properly fermented dough will have visibly doubled in volume, feel airy and jiggly when gently pressed, and retain a slight indentation without collapsing. Overproofing remains a risk even in cold conditions, particularly if dough is left unmonitored overnight; signs include deflation, sour or alcoholic odors, and poor oven spring.
