The nonstick coating on most modern cookware consists of polytetrafluoroethylene (PTFE), commonly known by the brand name Teflon. This polymer forms a smooth, low-friction surface that prevents food from adhering. However, PTFE is relatively soft and can be mechanically abraded. Iron utensils, in particular, pose a high risk of scratching, gouging, or otherwise compromising the integrity of the coating.
Damage to the nonstick layer not only reduces cooking performance but also raises potential health concerns. While ingested flakes of intact PTFE are considered biologically inert and non-toxic, repeated abrasion may accelerate coating degradation. More importantly, if the pan is overheated above 260°C (500°F)—a temperature more easily reached when the coating is damaged—the degraded PTFE can emit volatile compounds, including perfluoroisobutylene, which is acutely toxic to humans and can cause polymer fume fever.
For optimal safety and longevity, experts recommend using utensils made from softer materials: silicone, wood, bamboo, or heat-resistant nylon. These minimize surface contact stress while maintaining functionality across typical stovetop temperatures. Additionally, hand-washing with non-abrasive sponges and avoiding high-heat searing or broiling helps preserve coating integrity.
In summary, although occasional incidental contact with an iron utensil may not immediately ruin a nonstick pan, routine use is medically and technically inadvisable. Preserving the coating supports both kitchen safety and long-term cookware performance.
